Cauliflower Latkes

Looking for a new twist on the traditional potato pancake? Try this delicious alternative.

 

1 fresh cauliflower or 1 bag frozen

2 eggs beaten

¼ tsp salt

4 spring onions (scallions) finely chopped

¼ cup matzo meal

Oil for frying

Steam or microwave cauliflower until soft. Mash and add eggs, salt and onions. Fold the matzo meal through, set aside to expand, form into small latkes and fry.
